Easy Pork Chops recipe

Do you love to cook?  Or does 5 o'clock roll around and you're wondering what the heck you are gonna feed the monsters currently crying and pulling your pants down.  I happen to fall into the latter category, not so much becaue I don't like to cook, I happen to enjoy it.  But because  my husband is so boring when it comes to food, I don't really have the freedom to create in the kitchen.  I told him he was so complicated he responded with "I'm not complicated.  I just so simple it bugs you."  Ha got me on that one.

So anyway, I try to find/create recipes that are yummy (read: everyone eats them) and easy.  We have meat with.every.meal. (remember, feeding monsters here), so it gets costly as well.  Here is a simple easy maybe 20 minute recipe ~ Apricot Porkchops.
Through your pork chops into a baking dish and season.  I just use salt, pepper, and Lawry's.  Gotta have Lawry's in this house.
The recipe calls for breadcrumbs and I would love to just buy them, but they don't sell breadcrumbs in France.  Go figure.  So I make my own.  And you know what, I think it's better that way.
So here's how you do it:  Take some apricot jam or preserves and slather it on the seasoned chops.  cover the jam with the bread crumbs and voila, you have prepared dinner.  I know you are loving me now!
Pop them in the oven on broil for 15-18 minutes, make sure you are checking so they don't over cook, pork chops have a tendency to do that.  So I suggest setting it low and checking it.
This is the chops heading into the tuperware for leftovers.  When my family gets hungry around here, chaos ensues.  But that is another post for another time.  Just me.

So there you have it!  A super easy recipe that the kids will actually eat, because the jam adds sweetness to it, but works for the whole family!  You're welcome!

What do ya think?  Will you give it a try?

This looks amazing! Lucky me, they actually sell breadcrumbs in Germany. Not so sure I've seen apricot preserves here, though. I'll have to look next time I'm at the store!

Now that's the kind of recipe I can use. Do you think cracker crumbs would work as well as the bread crumbs? I have a lot I need to use up.

This looks great to me...my husband probably would think it crazy to put jam on pork chops!! He's the same way...just good ole' country cooking for him! I like to try new things!! I recently downloaded the Taste of Home app...very good app...to help with dinner ideas and the first recipe I tried was a winner and the second one was not. Story of our lives right now! Great post girl!

Sounds delicious, and like something my bf would totally love. As soon as I get an oven (yes, I have been living without an oven here in Denmark), I am going to fire these up.
